Pick the right pumpkin

Look for these three things at the patch:

• Flat bottom so it doesn't wobble.
• Even color with no soft spots or bruises.
• A sturdy stem — never carry a pumpkin by the stem, but a solid stem means it's still fresh.

The tools that actually matter

Skip the flimsy kitchen knife. What works:

• A serrated saw for the lid.
• A linoleum knife for tight curves.
• A scoop with a wide handle to gut the guts.
• A poker tool or a thumbtack to transfer patterns.

Carving in five steps

1. Cut the hole in the bottom, not the top. It preserves the stem, prevents the "sink," and makes lighting easier.
2. Scoop everything — thin the front wall to ~1 inch so light glows through.
3. Tape the template and poke holes along every line.
4. Cut smallest details first, largest last. This gives you room to work without breaking a delicate section.
5. Rub the cut edges with vegetable oil to slow browning.
